An inexpensive example of a true dual-band unit is the D-Link DIR-815RE. I just ordered a refurbished unit to experiment with. Your Wi-Fi issue is fascinating and something we'll all need to learn how to manage as time goes on. It is frustrating that even the latest iPhones and iPods cannot connect to 5GHz networks, but that's just the way it is. One possible, but expensive solution to your problem is to set your AirPort to broadcast at 5Ghz and buy more iPads or share the one you have. I do not know if Line 6 digital wireless does or does not interfere with or receive interference from other 2.4GHz devices, but moving everything else to 5GHz certainly seems wise.
