Buffers are computer memory. When you watch a video, you computer tries to keep the next few seconds of video in memory. It normally does this without you noticing. Youtube shows the amount video you've received and buffered as a light grey section of the play back line. If there is a slow down on the server or on the net between you and the server you'll see the "buffering" message.
