Re: Cruise Line productions - Does anyone work for one?
I've worked for shows that were booked on cruises in the dim, dark past... so I will refrain from mentioning the lines by name... but one of them treated the show's crew (crew provided and paid by the show producer, not the line) like they owned them. The other line was very different and the show's crew were treated like the entertainers.
As for working for the lines themselves, I suggest you do a google search for "holland america sucks to work for" or whoever you are considering, Matt. There is a lot of variation between lines and ever from ship to ship, depending on the attitude of the Captain and his top crew.
Cruise work can be a lot of fun with long hours or it can be real drag with long hours and abusive supervision. Remember that while on board the Captain runs the ship... all aspects of it... and law on board is that of the nation of ships registry, in addition to Maritime Law.

ps. After seeing how the ship's crews worked, I think of cruise work as "summer stock rep theater" on the ocean. It's intense sometimes, the gear may be new and wonderfully deployed or it might be old and poorly maintained... but I can guarantee that you won't forget your time on board.
