Re: iTunes question+1 - get your ITunes library right on the PC before you sync and you'll be all set. The phone pretty much needs to be considered a clean slate client. There are ways to retrieve your library from the phone if you've lost the PC copy, but there's no mechanism for bidirectional syncing.
