Jacobo, it was unclear to me if you are also running the live sound for the artists, or if you are hoping to just record.
If you are running the live system, then it is a lot easier to set up for the recording. If not, you should probably get in touch with whomever is running the live system as they can usually give you a stereo mic of whatever they are reinforcing. If you use something like the Zoom H4N, which will record four tracks, two of which would be the stereo mix from the sound board, and two would be the ambient room mix. Then you can take them home and work on blending them together after the show in Protools, or Audacity, or Reaper or Garage Band etc...
If you want a multi track recording with every instrument as a separate track, then you will have to invest a great deal more time and effort (and gear) in getting the recording system set up and interfaced with the live sound system.
