Someone helped themselves to my iPad a while back, and now it's time to get another one.

I was perfectly happy with the size of it when I had it, so I'm leaning towards the full size model. But the minis look pretty good, my only concern is that the screen is maybe too small for efficient mixing.
Have anybody made the switch from a full size to a mini? How was it?

The three types of desks I see is usually from Soundcraft/Midas and Yamaha, so those remote apps is of primary concern.

Helge - I don't know if the mini would have enough screen real estate to serve your needs or not. I do know that I recently got an iPad Air and really like it. Same screen size, lighter, considerably faster processor than standard iPad. I can really notice the difference in response running Soundcraft remote app. FWIW

I was in your shoes (not literally....or was I? ;o)) just over a year ago. Had my iPad2 stolen. Ended up going with an iPad Mini and it's been fine. I'm not lacking screen real estate. The screen is not that much smaller, really - because of the smaller edge around it. The battery life is disappointing compared to the iPad2, but as far as I understand, this is also a problem with the newer big iPads (?) Today I would have gone with the iPad Mini Retina, I think.

I've had to do a few things other than mixing on the two products. The mini is still usable, but the battery life is significantly less in my experience than the full scale products. Real estate wise, unless you have trouble seeing, the main thing is fader throw. If that matters to you, it's going to drive you nuts. But hey- if you can mix on a phone...
