Offsite listening for live sound monitoring

I'm looking for ideas or off the shelf solutions to implement the following setup.

--Measurement microphone permanently mounted at a remote location
--Microphone connected to audio interface
--Audio interface connected to rackmounted computer (can be mini PC with barebones specs).
--Computer constantly broadcasting an HD stream that can be accessed remotely.

Basically, I'm in charge of Audio support for 65+ sound systems and I'm wondering if there's a way to expand my troubleshooting toolbox. I can already tell a whole lot when I'm on the phone with technical staff and they run the system for me to point out issues, but having a basic reference mic could potentially do wonders for diagnosing feedback (we don't use automatic feedback suppressors and there are other factors that may be causing feedback that have nothing to do with ringing the mic out). Paired with the fact that I can log into the room's security cameras, I can learn a lot more about what's going - about as close to being in the room as it happens as possible.

Any ideas for how to put this in action? I'm not well versed in Shoutcast or similar platforms. Thanks!
