This has come up a few times so for all of us who do JV gigs where we are the only engineer here is my solution to a quick, easy, seperately controllable board feed for video, cd, broadcast, or whatever you need it for. Set up a post fader auxillary mix for all inputs at unity. If the board doesn't have a unity setting for the auxillary channels put them all at about 3/4. After you set up the front of house mix you can adjust individually up or down for the feed as needed and the mix will follow your fader moves but be balanced for the feed.

This works but you need to remember that anything happening on subgroups or the LR bus will not be reflected in the mix. If it's a bit of slight compression etc on the groups it won't really matter but if you're doing anything significant with them it could be a problem.
